So, last week i uploaded at like 9am or something ridiculous, and this week I'm posting at nearly 10pm because I was prioritising Grey's Anatomy and Blue Planet, sorry not sorry.
Anyhow, remember my pasta post? I mentioned a chicken and chickpea couscous recipe thing and so here it is.
When I was growing up, couscous was such a boring meal, but my mother and I have started adding random stuff in and seeing if it tastes good or not. it’s like in year 10 maths when you learn about trial and error except we haven’t hit the error bit... Yet... For this you will need;
Ingredients (4 servings)
1 chicken breast
250g couscous
2 onions
Black grounded pepper
Salt
Olive oil
Can of tinned chickpeas
Firstly, you would cut the chicken breast into small diced pieces and add black pepper to the chicken and mix it the two together. You would then cut two onions however you want, I usually cut them long ways keeping them medium sized, so not too thin and not too thick. Pour some oil into a pan and add the onion and the diced peppered chicken and make sure you continually stir before adding a dash of salt to it. At this point you should pop the kettle on, give a quick stir to the chicken and then move onto draining the chickpeas into a colander and giving it a quick wash with cold water. Then leave the chickpeas in the colander so the water can drain, after doing this, pour the 250g of couscous into the pan of chicken and onion and add an equivalent amount of water (to the couscous) into the pan and stir it. With the amount of water, I usually wing it (sorry not sorry) because I genuinely have no idea how much to pour. Add the chickpeas into this pan and put the fire on low heat while giving it a final stir and then put the lid on and leave it, giving the couscous time to absorb all the water and also allowing the chickpeas to soften in the warm heat of the pan. After about 5 minutes or so, the couscous should be soft and the water should be absorbed, then plate it up and enjoy! With both this recipe and the pasta, I make it for the servings I’ve stated but for myself so I have dinner or tea ready for me and it doesn’t have me cooking all the time or ordering takeaways often. Stay safe and stay blessed my friends.
P.s. I am not a chef so don't judge me. I'm a simple uni girl.
